Tofu Scramble (V, GF)
Whoever thought that tofu and turmeric could make a killer egg substitute was a GENIUS! I never was much of an egg person but this tofu I could eat all day long......
Tofu Scramble (V, GF) Time 35 minutes
1 block extra firm tofu, drained
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp ground cumin
2 tbs nutritional yeast
1 tsp turmeric
1/4 tsp sea salt
2 handfuls of chopped fresh spinach
Place a medium sized pan on medium to medium-high heat.
While the pan is heating up, mix all your seasonings (everything but tofu, spray, and spinach) in a small ramekin and put aside.
Add a light sprits of cooking spray to the pan and crumble the tofu into the pan (this is super satisfying for whatever reason).
Let the tofu brown lightly for about 3 minutes then stir and cook for 3 more.
Add your seasoning mix to your tofu and give it a stir. Add the fresh spinach and let wilt for about 2 minutes. Give it one last stir and it should be ready to eat!
