BOO! Did I scare you? Well these blondies are scary good and the number one nutrient-rich dessert or snack you should be making this fall season! Full of protein, omega 3s, and fiber, there's nothing not to love!

Pumpkin Protein Blondies (V, GF)

Ingredients
1/2 cup pumpkin puree
1 can chickpeas, drained and rinsed
1/4 cup maple syrup
1/4 cup cashew butter (or almond, pecan, or peanut butter)
2 scoops of vanilla pea protein (I used Orgain Superfood)
1/4 cup chocolate chips (I used Lily's 55% cacao)
1 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking soda
Suggested Toppings
1-2 tbs melted dark chocolate
1 tbs pumpkin seeds
Instructions
Preheat the oven to 350F. Line an 8x8 pan with parchment paper and spray with a nonstick spray.
Put all ingredients (except chocolate chips) into a food processor and process until silky smooth. Stir in the chocolate chips and add to the 8x8 pan.
Bake for 13-15 minutes until a toothpick comes out smooth.
Let cool completely and add your melted dark chocolate and pumpkin seeds on top. Allow 30 minutes to harden and slice into 9 pieces- enjoy!
